Byrne Family Weekly Menu: 3/30



Phew! Anyone else tired of cooking? I'm having fun getting creative in the kitchen, but gosh I am so tired. We've definitely had our fair share of chicken nuggets and mac n'cheese. I've made some fun meals though too: homemade sliders, deep dish pizzas and some yummy pasta dishes. I'm trying to balance out the comfort food and healthy dishes, but I'm leaning into the comfort a little bit more these days. Here's what I'm planning on making this week:



Weeknight Nachos:

This recipe comes from one of my favorite food bloggers, Smitten Kitchen. I don't follow the recipe exactly, but pretty closely. It's so easy to make and all on sheet pan.


Butternut Squash Soup with Roasted Broccoli and Toasted Naan:

This recipe couldn't be easier and it's supposed to be cooler/rainy on Tuesday, so I thought soup would be perfect. For the roasted broccoli: Roast at 425, drizzle some Olive Oil, and a few sprinkles of sea salt + freshly cracked black pepper. Add some lemon slices with it and roast for about 15 minutes.


Grilled Lemon Chicken with Rice and Sautéed Spinach:

I love lemon chicken and on the grill it's even better. This recipe is from another favorite of mine, Ina Garten. Simple and you can marinate it in the morning or the night before. I'll be using boneless, skinless chicken thighs. For the sautéed spinach, I heat a nonstick pan on medium heat, drizzle some olive oil and when its hot add chopped garlic (from one clove) for 30 seconds. Then add the spinach, salt and pepper, stir and let wilt for a few minutes. At the end I add a squeeze of fresh lemon. We are making enough of this to have for two nights.


Pizza Night:

My family has been on a deep dish pizza kick, but I'm feeling something else. Maybe a sheet pan pizza, maybe grilled, maybe naan pizzas...I'll let you know on Friday.
