Amping up the Classic BLT

Bacon, Lettuce and Tomato Sandwiches are a must during the summer months, and nothing is better than using your own fresh picked tomato from the garden. I like to jazz mine up with something extra, avocado. In my opinion, avocado just amps up the entire sandwich and gives it a little pizazz. You can even add some sharp cheddar to it to make it fancy. Also, don't forget some fresh bread from your favorite local bakery. That literally makes the sandwich. Here's my recipe for an Amped Up BLT:
Ingredients:
Serves 4
1 Loaf of fresh bread
Mayonnaise
Avocado sliced and then slightly smashed
1- 2 Packages of Bacon, depending on how much you like
Lettuce (I love butter lettuce on mine)
1-2 large tomatoes of your choice sliced
Sharp Cheddar (optional)
Olive Oil
Sea Salt + Cracked Fresh Pepper
Directions:
The key to making any kind of toasted sandwich is to have all the ingredients ready to go beforehand. This will make the sandwich assembly quick and easy.
Preheat oven to 425. Line a baking sheet or two with aluminum foil and parchment paper. Lay bacon on top, make sure its spread out evenly. Bake for 20-25 minutes depending on how crispy you like it. Meanwhile, on a small cutting board, lay out your sliced tomato. Drizzle with olive oil and sprinkle with sea salt and cracked pepper.
Toast your bread lightly in your toaster, then place the bread on a large cutting board. Spread the mayonnaise on, followed by the smashed avocado, bacon, lettuce, tomato slices, and cheddar if using. Cut in half and enjoy!
