Byrne Family Weekly Menu: 5/25



Happy Memorial Day! I hope you are spending it with the ones you love. It's not the official first day of summer, but it sure feels like it. I like to keep our summer menus simple, grilling out or no fuss meals. For dinner tonight, I already have it prepared. pesto pasta and chicken salad over greens. For an appetizer, we will have cream cheese with red pepper jelly and crackers. The best part about dinner is we can have leftovers for lunch.



On Tuesday, we will have naan bread pizzas. These have been such a hit in our house, especially because everyone gets their own individual pizza. I just put whatever toppings we have on hand and bake them at 450 for about 10 minutes.

On Wednesday and Thursday we will have Curried Lentils with Sweet Potatoes + Spinach over Rice. It's one of my favorite dishes.

On Friday, we will do pizza takeout. Like I said, we keep it simple for the summer. I can't wait for more dinners on the deck and picnics in the park. I hope everyone has a lovely week.
